Jon. Assembling AN lines is super easy. Don't fret about it.

Check out this link, just the center of the page for socketless hose
http://www.bakerprecision.com/aqp12b.htm

Its really critical here we are on the same page, you need to use the correct hose with those ends, parker, aeroquip, earls, summit, all make pushlock/socketless hose and ends. They all have nice hose without the braid etc. You do not want to use these socketess/push lock ends with regular rubber hose, the correct hose seals correctly. Now if u want to put a clamp on the hose ends u can but they don’t recommend it. I would in your case on your sandwich adapter on your car go from whatever NPT thread to a AN use an adapter then use the appropriate angle/straight hose end, attach the hose and then use the right end on the oil cooler. That’s how about 95% of the street going Subaru’s do it. Seems to work great no leaks, just fire sleeve the line around the header. Does your adapter have a thermostat?

I'm not a big fan of push lock hose fittings -- you're putting a lot of faith in the integrity of the bond between the rubber and the fabric braid, that a few minutes ago you sliced like butter with your pocket knife...

FWIW, my home shop airlines are made using push lock connectors, they pop off pretty frequently and have to be trimmed back a couple of inches before jamming back together, the sharp barbs on the push lock fittings chew the hose up pretty badly so clamping it would just cause a different kind of failure.

I'm thinking hot oil is much more challenging to seal than shop air.

Either you have some bad hose or bad fittings. 250psi operating pressure and 1000 psi burt, they should not be coming off, if you are using the correct stuff. There are some knock offs out there but using Aeroquip or Parker hose and ends should net you the best results.

yes, my adapter will have a thermostat.

I'm doing all my parts shopping on ebay, but looks like Aeroquip parts are a-plenty there.

I can already see the difference between ebay no-name brand:
http://cgi.ebay.com/ebaymotors/ws/eBayISAPI.dll?ViewItem&item=120509275690&viewitem=&sspagename=STRK%3AMEWAX%3AIT

vs aeroquip

(2 prong vs 3)

and they recommend the Aeroquip AQP hose, which I've also found as well.

sweet, thanks guys.

What's wrong with the reusable compression fittings? You just twist them down with a wrench and a vice, and I doubt it would blow off at any point...
