I think that the general sentiment that you're worrying too much has a lot to it. You're not going to be driving the car daily on the 401 in the winter, so whatever you do should be good enough.
While I really like how you're getting all romantic with it, but the simple facts are you're likely going to be onto another car or being doing major surgery for one reason or another before serious interior corosion becomes a big issue. Especially if you coat it with just about anything.
Keep in mind, you won't have any nasty interior carpet etc to lock moisture in. I think a LOT of interior rust happens from interior bits locking or trapping moisture in the interior of the car in one form or another.
I hear the same thigns about POR 15 as well.. it's madening.. some say it's gods gift to rusty metal, others say it's a complete waste of time and money.
