I always hear talk about anti-dive and anti-squat geometry when I read car mags, and I know it involves moving suspension pickup points, but what does it really do and what is the goal to be achieved by doing it?

Really quickly "anti-" geometry is about controlling the pitch attitude of the car by harnessing the torque reactions at the wheels. For example if you use anti-dive geometry on the front of the car you can run softer springs (which equals more traction) without the car pitching nose down. The goal of keeping the car level is to keep all of the tires as evenly loaded as possible thereby sharing the load better for maximum traction.

Why wouldn't oems incorporate this into the original design?

Does it have drawbacks in other areas?

Many do.
My Saab 96 has anti-dive geometry designed into the back links, Escort MkII have anti-dive kits for their front end....

There IS a tendency for anti-dive geometries to lock suspension, which on loose surfaces maybe ain't the thing we need for braking.

I always remove anti-dive front suspension geometry for tarmac-only cars. When you're running stock (soft) springs and dampers it's nice to keep the car from being a wallowing pig, but with racing spring rates it's kind of a moot point. Besides, the amount of caster variation I've seen through the suspension's travel with anti-dive is horrendous.

For anti-squat (and RWD), you can get some severe wheel hop under braking if you go too far.
