My questions is how tough are the sidewals on those types of tires ?
Do we have to ''snake'' around all the rocks and sharp road damage...or can we ''plow true'' like we do with regular gravel tires ?

The sidewalls and construction of the tire was no different than normal gravel tires. If anything they were a bit thicker/stiffer.
