As for float in disc or hat, got with float in hat. That way you're not stuck to the $350+ AP discs and bobbins. (well brembo has it own oval deal too) You can make a float in have with any disc with a round hole. Theres more pro's and cons but none of those pertain to our miniscule amateur world.

What kind of bobbin? Have one you recommend? Looking at options and some stuff listed as high a ~$8 per bobbin!
Which ones are those? $8 is not bad. They're normally sold as a kit and can get $$$.

It was an AP part number and converted from GBP to around $85 for ten as I recall.

CP2494-626K12 which is a float in bell. I suppose what I'd want to look for is CP2494-29 which the 12 pack kit ends up at around $8 a bobbin from what I can see also.

Those bobbins are ok but they dont pilot onto the disc hole. All the torque takeout is on the bolt shoulder which is weaker and breaks often.

I use a bobbin similar to one of the brembo designs.
